Like Kanye West said "The prettiest people do the ugliest things....." those lyrics sort of put a lot of emphasis on visual appearance and also on our actions. The way we look and the things we do will get noticed so when it comes to food, I like mine to look a certain way, by time it makes it to my table, for serving. If you don't know, I set a goal to create 7 cost efficient meals musings as many healthy and fresh ingredients as I could. The first was a Romaine Chicken Gizzard Salad & Soup and now I'm using okra to create something that has as much flavor as New Orleans Gumbo. It includes a Product of Jamaica from buygracefoods.com. This recipe is packed full of flavor.

What you need

  • 1/2 lb. fresh okra
  • 1 large tomato
  • 1 large jalapeno/ Poblano pepper
  •  1 yellow squash
  • 1 tablespoon of fresh ginger
  • 1 package of Grace Caribbean Fish Tea Soup Mix  
  • Rotisserie Seasoning, Badia Complete
  • 1 box of Jiffy Cornbread Mix
  • 1 egg
  • 1/3 cup of milk
  • 2 Sweet 'n Lows
  • 1 stick of margarine

Preparation Instructions
  • Remove the stem from okra and cut into half
  • Cut tomato into slices or cubes (set aside in desperate dish)
  • Cut jalapeno pepper into slices
  • Chop fresh ginger 
  • Add 1/2 stick of margarine to a medium sized skillet or pot and cook to a sizzle
  • Season okra with rotisserie and Badia Complete Seasoning
  • Add okra, jalapeno, and ginger to heated skillet
  • Fry for 6-7 minutes or until margarine evaporates
  • While okra, jalapeno, and ginger fries, prepare soup mix mixture as instructed on packet using cold water
  • Add in 2 tablespoons of Jasmine Rice
  • Cool for 15-20 minutes, add tomato during last 3 minutes
  • Prepare cornbread as instructed on Jiffy package using 1 egg and 1/3 cup of milk/cream
  • Cook cornbread until golden brown
  • Roll remaining margarine over the top of hot cornbread
  • Pour soup mixture into a medium sized bowl and slice cornbread into fourths and serve
